Hestan ProBond Luxe Stainless Steel Skillet with Lid, 11"

A tri-ply stainless steel skillet is a great everyday pan for searing, browning and sautéing when you want responsive heat and a surface that can develop flavorful fond. The shape also works well for pan-frying and reducing sauces once you have built color on the bottom.

A lid helps trap heat and moisture, which is useful when you want to finish thicker cuts gently, soften vegetables or keep splatter down while cooking. It can also help you hold warmth while you prep the next step of a meal.

Yes, this stainless steel skillet is designed for recipes that move from stovetop to oven, so you can sear first then finish with oven heat. For best results, use oven mitts and follow the use and care guidance for both the skillet and the lid when cooking at higher heat.

Preheat the skillet, add oil and let it heat before adding food. Pat ingredients dry and give them time to release naturally before you flip, which helps you get better browning. When you are done, deglaze the browned bits with a splash of liquid to turn fond into a quick pan sauce.

Let the pan cool slightly, then add warm water and a little soap to loosen cooked-on bits. A short soak or a gentle simmer with water can help lift stubborn residue without scraping. Use a nonabrasive sponge to keep the stainless finish looking its best.

A helper handle gives you extra leverage and balance when the skillet is full, making it easier to lift, pour or transfer. It is especially handy when you are moving the pan between the stovetop and oven or carrying it to the table.
